I'm Baking Mad - Jubilee Ice Cream Cupcakes

If, like me you're always on the lookout for exciting new recipes to try, you must check out the Baking Mad website.  It's packed with easy to follow recipes, delicious cakes and bakes and helpful hints and tips.

I thought I'd while away the morning cupcake making and I used their recipe for ice cream cone cupcakes - with a little Jubilee- themed tweaking. Because we're trialling Ruby on a cow's milk free diet, I substituted the butter for a dairy-free alternative.  It worked well in the cake, but less so on the icing - it was a bit too sloppy so didn't hold the swirl as well as I'd hoped.


I've always fancied having a go at these, but I couldn't figure out how you baked the cakes in the cones without the wafer burning.  Who'd have know it - they give you a top tip for that too!



The recipe was easy to follow, the only tip I'd add would be to remove the tin foil from the cones as soon as possible after baking, otherwise the condensation makes them soggy.  The website allows for reviews to each recipe - so I can add it there for others to see.




There are so many gorgeous recipes to choose from. Plenty to whet my appetite and keep in store for when the veg patch starts to provide - butternut squash chocolate cake,  rhubarb and ginger cake and rosemary sandwich cake.

There are lots of seasonal recipes and loads of ideas for jubilee tea parties and union jack themes.



The site had loads of really useful features.  Some of my favourites are:


  • measurement converter on each recipe
  • links from each ingredient to the product - helpful for checking out any allergy issues and useful to know what you're looking for on the supermarket shelf!
  • you can highlight each part of the recipe so you don't lose your place as you go along
  • there's the option to enlarge the text or print out
  • you can save it to your online recipe book on their site
  • handy share buttons so you pass it on to friends and family by Tweet or Facebook

  3. I've done similar before but not made the cakes! I bought ready made fairy cakes and just put them in the cone. I know it's cheating but we love the decorating bit best! Lol

  4. I'm allergic to cows milk. Trex or Stork both work well as a butter substitute for buttercream!

  7. Fab idea for the Jubilee, just need some sun. I've made these before and didn't need the foil at all hon so if you're scared of a soggy bottom try it without the Baco bloomers. x
